Sourdough Bread Recipe

Sourdough bread is a timeless, delicious and slightly tangy loaf that has been a staple in various cultures for centuries. What sets sourdough apart is its unique fermentation process, where naturally occurring wild yeast and bacteria work together to leaven the dough. This natural fermentation not only creates a distinct sour flavor but also enhances the bread's texture and shelf life. With its crusty exterior and soft, chewy interior, sourdough bread is a versatile delight that can be enjoyed on its own or as a perfect companion to a variety of spreads and toppings. Whether you're a seasoned baker or a beginner like me, the art of making sourdough is a rewarding journey that brings the wonderful aromas and tastes of homemade bread right to your table.

Ingredients & Tools Needed:

  • 240 grams active sourdough starter

  • 360 grams warm water

  • 500 grams bread flour

  • 9 grams salt

  • Kitchen scale

  • Dough whisk

  • Large mixing bowl

  • Dutch oven

  • Parchment paper

Directions:

  1. Activate the starter - ensure that the sourdough starter is active and has been recently fed.

  2. In a large mixing bowl, combine the active sourdough starter with warm water. Mix well and then add in the bread flour and salt gradually until everything is well combined and a shaggy dough forms.

  3. Turn the dough onto a floured countertop and knead the dough for 5 minutes until it becomes smooth and elastic.

  4. Place the dough into a bowl, cover with a damp cloth, and leave on the counter for an hour.

  5. Do one set of stretch-and-folds by pulling one side of the dough up and folding it over the middle. Rotate the bowl and repeat this step 3 more times until you make it around the bowl. Cover with a damp cloth and let it sit for 30 minutes and then repeat another round of stretch-and-folds.

  6. After the last round of stretch-and-folds, cover the dough in the bowl with a damp cloth and let it sit on the counter for 4-6 hours or until the dough has doubled in size.

  7. Place the dough in the fridge for 1-2 hours.

  8. Preheat the oven to 500 degrees Fahrenheit and while the oven is preheating, place the dutch oven with the lid on in the oven to warm.

  9. Carefully transfer the risen dough onto a piece of parchment paper and score the dough using a sharp blade.

  10. Once the oven has preheated, remove the dutch oven carefully place the dough into the dutch oven, and place the lid on top.

  11. Place in the oven for 25 minutes then uncover and cook for an additional 10-15 minutes or until the crust is golden brown.

  12. Remove the bread once done cooking and allow it to cool before cutting.
